Every gathering seems to have that one dish that disappears before anything else. Around here, it’s usually this Mexican corn dip. It’s creamy, cheesy, packed with sweet corn, colorful peppers, and just the right amount of flavor to keep everyone reaching for another scoop.
One of the things I love most about this recipe is how easy it is to put together. Whether you’re making it for game day, a backyard barbecue, a holiday party, or a casual movie night, it’s the kind of appetizer that fits just about any occasion. It comes together with simple ingredients, but the combination of sweet corn, melty cheese, creamy mayonnaise, and fresh peppers makes every bite satisfying.
My favorite way to serve this dip is with Fritos Scoops. They’re sturdy enough to hold a generous scoop, and their salty crunch pairs perfectly with the creamy, cheesy dip. It’s also delicious with tortilla chips, crackers, or fresh vegetables if you’re looking for a few different serving options.
Like many of my favorite recipes, this one is easy to customize. Add a little extra heat with diced jalapeños, stir in cooked bacon, or finish it with fresh cilantro and a squeeze of lime for even more flavor.
If you’re looking for an appetizer that’s always a crowd favorite and never lasts long on the table, this Mexican corn dip is a recipe you’ll want to keep on hand.
